Marcela's version of the viral Covid-19 whipped coffee

My version of the viral Covid-19 whipped Coffee... Here’s the recipe for the coffee drink I made on the live. You could obviously just pour it over your favorite milk but the horchata is fab on it’s own.

Preparation

Ingredientes

  • WHIPPED COFFEE: 2 tablespoons instant coffee (not ground coffee!)
  • 2 tablespoons chopped or grated piloncillo
  • 1 teaspoon fresh orange juice
  • 2 tablespoons hot water
  • Small pinch each of cinnamon and clove
  • Using hand-held mixer or whisk, beat vigorously until tripled in volume.
  • HORCHATA: 1 cup white rice, not rinsed, not cooked (basmati or long grain rice or jasmine or whatever white rice)
  • 1 cup raw almonds
  • 1 cinnamon stick, torn into pieces
  • 1/3 cup cane sugar

Instrucciones

  1. For Whipped Coffee: Using hand-held mixer or whisk, beat vigorously until tripled in volume.
  2. For HORCHATA: Place almonds and 1 cup of water in small bowl.
  3. Place rice and 1 cup of water in another small bowl.
  4. Let both soak 5 hours. Drain and peel almonds. Rice STAYS in water.
  5. Stir sugar, cinnamon pieces and 1/2 cup water over medium heat until dissolved.
  6. Put 3 cups water in blender. Add peeled almonds, rice WITH water, cinnamon-sugar mixture and blend until very smooth.
  7. Let mixture sit for 2 to 3 hours. Strain into pitcher.
  8. Serve over ice and top with whipped coffee.
  9. Devour!
