Arroz con Leche with Matriarca Agave

It’s Mother’s Day, and not just on May 10 — this year you get both the American and Mexican version on the same day, and honestly, you deserve the whole month. Make something warm, sweet, and comforting, and finish it with a drizzle of agave. That’s it. That’s the plan.

Preparation

Ingredients

  • 7 cups water
  • 1 cup long-grain white rice
  • One 4-inch cinnamon stick
  • 1/2 cup Matriarca agave syrup
  • One 12-ounce can evaporated milk
  • 1/2 cup condensed milk
  • 1 cup whole milk
  • 3/4 cup golden raisins
  • Ground cinnamon, for dusting

Instructions

  1. Put the water, rice, and cinnamon stick in a medium-size heavy saucepan over medium-high heat. Bring to a boil, uncovered, and cook until the rice is tender, about 18 minutes. Strain out the liquid, discard the cinnamon stick, and reserve the rice.
  2. Return the rice to the saucepan. Stir in the evaporated milk, condensed milk, whole milk, and agave. Continue cooking over medium-high heat until the mixture comes to a boil.
  3. Reduce the heat to low and cook, uncovered, stirring constantly, until the mixture is thick and creamy, about 20 minutes. Taste and add more agave if needed.
  4. Add the raisins and stir well. Transfer to a serving bowl. Dust with ground cinnamon and serve.
