Agua Fresca de Pepino, Limon, Hierbabuena y Chia

Its Hot Again!

Now that the heat is picking up in California, and i assume everywhere, I know we are all pouring ourselves a nice tall glass of agauas frescas to try and stay cool. This is one of my favorites, because it really is refreshing. Agua fresca de pepino and limon y las liquid air conditioning. You immediately drop a couple of degrees.

Then sweetening it with agave makes it perfectly sweet, without going overboard. Compliments the flavors really well. And, lets be honest, agave and pepino makes it feel healthy to drink. So , have as many glasses you need to keep yourself cool.

Preparation

Ingredients

  • 4 large Persian cucumbers, roughly chopped
  • 1 packed cup fresh mint leaves (plus extra sprigs for garnish)
  • 1 cup freshly squeezed lime juice (about 8 to 10 limes)
  • 1/2 to 3/4 cup Matriarca agave, depending on desired sweetness
  • 8 cups cold filtered water, divided
  • 3 tablespoons chia seeds
  • Thin cucumber slices, for garnish
  • Lime wheels, for garnish
  • Ice, for serving

Instructions

  1. In a blender, combine the chopped cucumbers, mint leaves, fresh lime juice, agave, and 4 cups of the cold water.
  2. Blend until completely smooth and vibrant green.
  3. Strain the mixture through a fine mesh sieve into a large pitcher, pressing well to extract all the liquid. Discard the solids.
  4. Add the remaining 4 cups of cold water and stir well. Taste and adjust sweetness if needed with a little more agave.
  5. Stir in the chia seeds and let the agua fresca sit for 10 to 15 minutes so the chia can begin to bloom slightly.
  6. Add plenty of ice, fresh mint sprigs, thin cucumber slices, and lime wheels to the pitcher for garnish.
  7. Serve very cold and enjoy!
