Grilled Brie Stuffed with Piloncillo Caramelized Apples
Preparation
Ingredients
- 1 16-oz wheel of brie
- 1 tablespoon butter
- 2 thyme sprigs
- 2 rosemary sprigs
- 1 cup thinly sliced apples
- 1/2 cup piloncillo
- 2 tablespoons olive oil
Instructions
- Heat an outdoor or stovetop grill on medium-low heat. Allow grill to reach a temperature of 500 degrees F.
- In a medium saucepan on medium-low heat melt butter. When butter has melted add thyme, rosemary and apples. Saute apples for about 5 minutes and add piloncillo. Continue to cook apples until piloncillo has entirely dissolved and is starting to caramelize.
- Remove rosemary and thyme. Allow apple mixture to cool down. Slice wheel of brie in half lengthwise. Slicing is easier if the wheel of brie is cold instead of room temperature.
- Add sautéed apples to one half of the brie and top of with the other half. Brush grill with olive oil. Before grilling make sure the grill has reached the temperature indicated. This will make sure the brie gets perfectly grilled and not start to melt.
- Place brie on grill and cook for about 3 minutes on each side. Serve immediately with a sliced baguette or your favorite cracker.
