Flamed Shrimp Chipotle Tostadas
Preparation
Ingredients
- 3 whole adobo chipotles (canned)
- 1/2 cup of sour cream
- 1/4 cup of milk
- 1 teaspoon of garlic powder
- 1 pinch of Matriarca Sal de Colima
- 1 pinch coarse ground pepper
- 1 tablespoon olive oil
- 2 pounds raw, peeled shrimp
- 1/4 onion, finely chopped
- 2 garlic cloves, minced
- 3 tablespoons butter
- 1/4 cup tequila, for flambeing
- Tostadas
- Chopped cilantro, for garnish
Instructions
- In a blender combine chipotle, sour cream, milk, garlic powder, salt, pepper, and oliveoil. Blend until ingredients are combined.
- You can always add more peppers for a hottersauce. Set aside for later.
- In a large skillet on medium high heat, melt butter. When butter has melted add onionand garlic and sautee until onion has become translucent.
- Season shrimp with salt andpepper and add to the skillet. Cook for about 3-5 min until they start changing color (apinkish tone).
- Season with salt and pepper. Add the tequila to the skillet. Tilt the panslightly over the burner to ignite the tequila and cook until the flames subside.
- When the flames have cooled down. Return skillet to medium high heat and add chipotle cream.
- Let sauce simmer.
- Place shrimp on tostada, and garnish with cilantro and enjoy!
