Adam’s Easy Cherry Tomato Pasta
This easy cherry tomato pasta is a delightful dish that combines fresh ingredients for a flavorful meal. The sauce is made by simmering cherry tomatoes with garlic and basil, creating a deliciously simple sauce that pairs perfectly with al dente pasta.
Ingredients
- ¼ cup olive oil
- 2 garlic cloves, smashed
- 2 pints cherry tomatoes
- Kosher salt
- ¼ cup fresh basil, chopped
- 1 pound pasta, cooked al dente, reserve pasta water
- 2 tablespoons butter
- Shaved parmesan, for topping
Directions
Add olive oil to pan. Smash garlic and add to pan, cook on medium-low heat until light brown.
Add tomatoes and continue to cook. Simmer on medium-low heat until they start to release juice. Smash some tomatoes with the back of a wooden spoon.
Add basil. Pasta sauce is done when tomatoes have released their juices and have become a sauce-like consistency. Season heavily with salt and pepper.
Add pasta directly into the pan. Add a splash of pasta water and butter and stir to melt. Serve with shaved Parmesan on top and enjoy!
