Sweet watermelon, cooling mint, and a touch of jalapeño come together in an agua fresca that’s bright, refreshing, and just spicy enough to keep you coming back for another sip. Finished with a rim of Matriarca Organic Agave and Matriarca Pica Maica, every drink gets a sweet-tangy-spicy finish that makes it feel extra special.

Ingredients

  • ½ cup granulated sugar
  • ¾ cup loosely packed fresh mint leaves
  • ½ cup water
  • ½ fresh jalapeño chile, stemmed and seeded
  • 2 thyme sprigs
  • 5 cups chopped, seeded watermelon
  • Ice, for serving
  • Matriarca Organic Agave
  • Matriarca Pica Maica

Instructions

  1. Combine the sugar, mint, and water in a medium saucepan over medium heat. Cook until the sugar dissolves, about 4 minutes. Add the jalapeño and thyme and let infuse for 5 minutes.
  2. Remove the jalapeño and mint, reserving the thyme sprigs for garnish if desired. Strain the infusion into a blender with the watermelon and blend until completely smooth, about 2 minutes.
  3. To serve, brush or dip the rim of each glass with Matriarca Organic Agave, then coat the rim with Matriarca Pica Maica. Fill the glasses with ice, pour in the agua fresca, and garnish with the sugared thyme sprigs if using. Serve immediately.
