Guava-Mango–Agave Glazed Wings

David's wings make a comeback!

This recipe needs a little backstory. A few days ago, David made one of my now most popular reels on Instagram, and all I did was grab a handful of Matriarca pantry staples and see what would happen. Mango jam, guava jam, powders, matcha, agave, salt. No overthinking. No measuring stress. Just pantry cooking at its best.

The wings were so good that the kids asked for them again the next day. And then again today. So I developed the recipe and here it is. This is officially day three of wings in our house, which tells you everything you need to know. When something passes the kid test multiple days in a row, it’s a keeper.

So here’s the recipe, as promised. If you want to see how it all came together, and watch David in action, I’ve linked the reel on my Instagram below. This one is simple, flexible, and made entirely with things you already have in your Matriarca pantry.

Preparation

Ingredients

  • 6 pounds chicken wings
  • 1 Tbsp oil
  • 2 tsp salt
  • 1 tablespoon onion powder
  • 1 tablespoon carrot powder
  • 1 tablespoon celery powder
  • 1 tablespoon pimiento powder
  • 1 tsp coriander powder
  • ⅓ cup guava jam
  • ⅓ cup mango jam
  • 6 Tbsp agave
  • ¼ cup soy sauce
  • 2 Tbsp apple cider vinegar
  • Juice of 1 lime
  • 1 Tbsp salsa macha
  • 2 tsp garlic powder
  • 3 Tbsp vinegar-based hot sauce

Instructions

  1. Preheat oven to 425°F (220°C). Pat wings very dry. Toss with oil, salt, pepper and powders. Arrange wings on baking sheet spreading out. Roast 40–45 minutes, flipping halfway, until deeply golden and crisp.
  2. Blend guava jam, mango jam, agave, soy sauce, apple cider vinegar, lime, salsa matcha, garlic powder and the hot sauce until smooth and transfer to small saucepan. Add a little water to blender to reblend and get all the glaze out.
  3. immer 5–7 minutes, stirring often, until glossy and slightly thickened. Adjust the seasoning to your taste.
  4. Transfer hot wings to a large bowl and toss generously with glaze. Return wings to oven (or air fryer) for 5–8 minutes, until sticky and lightly caramelized. Watch closely—agave burns quickly.
  5. Finish with a squeeze of lime and a sprinkle of sesame seeds or cilantro.
